Three-color sweet potatoes boiled with ginger

Ingredients and seasonings

  • 300 grams of mixed sweet potatoes (peeled and cut into medium thick pieces)
  • 50 grams of sliced old ginger (peeled)
  • 50 grams of coconut sugar (or palm sugar)
  • 600 ml clean water

Method

  • Put water in a pot and heat over medium heat.
  • When it boils, add ginger and sweet potatoes. Cover with a lid.
  • Boil until the potatoes are cooked, then add the coconut sugar, mix well, and cover with a lid.
  • Continue boiling for a little longer until the sugar is completely dissolved.
  • Turn off the heat and ladle into serving bowls.
